Herb butter recipe

Herb butter is quite popular here in Germany. No wonder! It’s delicious. And a clever and quick way to add healthy, phytonutrient packed herbs to your diet.

There is so much you can do with it besides slathering it on bread, toast, bagels, corn bread, scones or biscuits. Add it to sautéed, steamed or grilled veggies like zucchini, summer and winter squash, green beans, carrots, artichokes, asparagus, broccoli and cauliflower. Sear a steak with it! Grill mushrooms filled with herb butter. Scramble an egg, make a frittata, fry an egg or make an omelet with it.

When I make it, I walk out of my kitchen and gather the herbs I fancy. The winners today were rosemary, thyme, basil, chervil, marjoram, oregano sage, chives, parsley, Welsh onion, winter savory, garlic chives and society garlic. But I’ve used tarragon, ramps, summer savory, nettle, ground elder and salad burnet.

Don’t skip the lemon juice and the sugar. They bring out a superb flavor.

And of course you can use salted butter. Just make sure to use less salt when seasoning.

Ingredients

  • 250g (1/2 pound, 8 ounces, two sticks) unsalted butter, softened
  • 50g (1/2 cup) finely chopped fresh or frozen herbs (I used rosemary, thyme, basil, chervil, marjoram, sage, chives, parsley, Welsh onion, winter savory, garlic chives, society garlic fresh from my garden)
  • 1 teaspoon freshly squeezed lemon juice
  • 1 tsp salt
  • 1/2 teaspoon sugar
  • 1/2 tsp freshly ground black pepper

Directions

Add unsalted butter, chopped herbs, lemon juice, salt and pepper to a food processor fitted with a blade attachment. Beat until well mixed.

Use it on anything and everything. Well, almost.

Makes 300 g (about 1 cup)
