Herb butter recipe

Serves: 1 cup
  • 250g (1/2 pound, 8 ounces, two sticks) unsalted butter, softened
  • 50g finely chopped fresh or frozen herbs (I used rosemary, thyme, basil, chervil, marjoram, sage, chives, parsley, Welsh onion, winter savory, garlic chives, society garlic and ramps fresh from my garden)
  • 1 teaspoon freshly squeezed lemon juice
  • 1 teaspoon salt
  • ½ teaspoon sugar
  • ½ teaspoon freshly ground black pepper
  1. Add unsalted butter, chopped herbs, lemon juice, salt and pepper to a food processor fitted with a blade attachment. Beat until well mixed.
